'Decent Flavor Structure, but Taste Components Not for All'
Aberlour 12 Years Double Cask is not for those pursuing 'popularity and fame,' but 'flavor.' It is undeniable for experienced whisky lovers to acknowledge that the whisky is well-made, given the trend that people prefer the simple and intuitive flavor at first and then begins to seek sophisticated one with experiences in cultural and art fields. However, I am quite certain that there are like-dislikes about the flavor components.
The scents consist of apple, soft flower, a hint of butter, and tenuous raisin. Right after opening, the mixed smell of apple & mild alcohol arouses, which keeps its presence throughout the whole time enjoying the whisky. The varying degree of apple scent affects other scents' conditions. For example, depending on the intensity of the apple scent, the flower and butter emerge more or less. However, the apple scent is always at the top of the overall smell. Raisin leaks its presence briefly(1~2 seconds) and goes away for good. If there are other scents, it might result from the mixture of apple and alcohol.
The taste consists of syrup sweetness, malt, soft spicy, light bitterness, dark chocolate flavor, and moderate bitterness. One can experience the overall taste through three stages, and also, there is a difference between the first and second sip.
First, the taste of syrup, malt, butter, and soft spiciness can be tasted on the tongue. The spiciness is mild enough to keep it inside the mouth for long. Right after swallowing, before the finish notes come up, one can feel the soaring light bitterness with the spiciness. What's noteworthy is that the spiciness doesn’t seem to dull the sense of mouth but to support the bitterness and divide the taste into the finish.
The savor of dark chocolate and different bitterness spread from the finish. The chocolate note is imperceptible after one dram, for which one can distinguish the two as individual entities. The bitterness at the finish is heavier than the last one, similar to coal. However, the bitterness keeps the sweetness from being too overpowering, which is not uncomfortable. Also, adequate acidity exists, stimulating the saliva gland. The flavor alteration is slight, and the apple smell decreases with more sipping.
Although the whisky could make people uncomfortable with its little sherry flavor and bitterness, it is still a good option because of its flavor composition. Aberlour Distillery seems to pursue abundant and colorful flavor.
Understandably, popularity affects the purchase, but whisky lovers have to notice that fame doesn't guarantee the flavor quality. The real charm of whisky is diversity, and there are decent options that are cheap and readily available. Particularly, The Aberlour lineup, prevalent in France, is worth experiencing like Balvenie and Macallan. The whisky seems to be more suitable for experienced whisky lovers than beginners.
