Right After Opening.
After opening the bottle, the scent of green apple and pineapple filled the surrounding air. Strong carbonic taste and a flavor of green apple come together. At the finish, a strong flavor of yeast can be picked up. As the strong carbonic taste faded away, 'bitterness' took over. The lingering bitterness irritates the tongue quite a bit.
The scent and flavor can play an advantageous role to attract customers but the bitterness that enters in the middle of sipping and at the finish came as a big disappointment.
After 30 mins
The acid flavor replaced the bitterness and made the mouth salivate. After the saliva dries out, previously present bitterness revisits. The acidic flavor is not pleasant but was rather too much.
After 1 hour
The bitterness faded away and the acidic taste subsided to an adequate degree. Yet, it still is much stronger than other entry-level champagnes. The strong acidity kept the mouth water throughout the night.
The aeration made the yeast aroma overpower the apple scent. The reduced acidic taste gave the champagne a light body but the ‘bitterness’ still remained. Although the liquid lingered in the mouth only for a brief moment, it still felt bitter.
The only appealing point of this champagne is the green apple flavor present at the opening. However, authentic bitterness and high acidity that fill up Grand Brut might be considered overpowering for some customers.
As there are many other alternatives to this champagne, especially with the current price, there is no repurchase intention. It is highly recommended to buy higher-grade champagne of Perrier Jouet. This specific product doesn’t quite represent the brand value.

Rather watery yellow-gold. Almost no visible bead. Very crisp, white-fruit nose. Complex, toasty, also floral, Fine but high acidity, a line of chalky minerality, fairly tart, citrus finish.
