Given the process and history of whisky, although the origin and popularity of peated whisky are inevitable, the whisky has a high barrier to entry in the market being ruled by sherry and bourbon. The distinctive smell associated with 'disinfectant' makes the whisky hard to drink. However, Highland Park 12 cleverly opens the entry barrier of peated whisky using a familiar sherry aroma.
After opening the bottle, the unique aroma of light peat combined with sherry arouses interest. Soon, the first partner of peat, sherry, quickly exits, and other scents take over the place successively. Then, as the nose becomes tired, the aromas of orange, fruit, honey, and tart pop up and pair up with the peat in order. That makes the smell of the whisky multifaceted.
In tasting, one can find the taste of the sweetness, orange, and slight spiciness. Though the alteration of smell caused by tasting is minor, the lingering spiciness keeps in the mouth and tires the mouth, whereby the taste of orange subsides, and the malt substitute. At the finish, the smell of soft peat and old tree arouses.
